In central Spain, in the town of Guijuelo (in the Salamanca Mountains), the cool summers and cold winters make drying times slower and milder. In this particular climate, we have managed to find a limited quantity of 60 months of black hog ham. As only 120 to 160 hams are produced each year, 60-month hams are particularly valuable.
The long drying time gives the ham a complex and elegant flavour that melts in the mouth and makes it unforgettable.
